Well it’s officially Fall and I’ve already begun craving Pumpkin. I’ve been trying to get myself better about eating breakfast and Ive noticed I often catch myself reminiscing about childhood breakfasts of oatmeal, so I decided to do a pumpkin oatmeal. This recipe is Vegan also.
Combine the following ingredients in your crock pot and mix well.
1 12 oz cane Pure Pumpkin
3 cups old fashioned oats
6 tablespoons chia seeds
4 cups soy milk
3 cups water
1 cup or more raisins
1 to 2 tsp cinnamon
1/2 cup brown sugar
I cooked it on low for about an hour the night before and then put it in my refrigerator over night. I heated it up for about an hour on high stirring occasionally.
It would probably cook nicely in about 3 or 4 hours on low or about an hour or 2 on High
I did not find the the “pumpkininess” to be overbearing at all. If were to make this in say November vs September I would probably add nutmeg and include dried cranberries. But, for a random morning in September it was perfect. Also keep in mind that you can substitute out the soy milk for water.
